credits)
Gives the student a thorough understanding of
the French Language that is specifically needed
for the hospitality industry. It involves
reading, writing, listening and practical
presentations of actual situations.

An orientation to the hotel, restaurant, travel & tourism industry
through a review of the historical development of the industry. The
course prepares the student to apply management principles to the
problems encountered in the supervision of the people in the

Convention Management (3 credits)
Introduces the student to the basics of convention and the
management of groups. Explains the difference between conference and
convention. Topical coverage: planning, organizing, and meeting
planners, transportation and all other related activities of groups,
making profits and the relation between convention manger and
concerned departments.
BHTM208 Hospitality
Business Law (3 credits)
New laws and their impact on the hospitality industry are examined.
This course covers current legal issues and problems.
BHTM215 Front Office
Management + Fidelio Lab (4 credits)
The course familiarizes the student with the rooms division of the
hotel. Topical coverage: yield management, reservation, check-in
check-out, & night audit. The importance of the relationship of the
Front Office and other departments will also be covered.
BHTM220 Housekeeping
Management + Fidelio Lab (4 credits)
This course covers the scope, responsibilities, communications,
terminology, materials, and concerns specific to hotel housekeeping.
Topics include management and supervision of housekeeping staff in
the proper cleaning and sanitation of rooms and public areas,
budgeting, purchasing, security, and inventory control. Upon
completion, students should be able to understand and apply the
principles of organization and management of a housekeeping
department.
BHTM240 Food & Beverage Services + Lab (4
credits)
The course will introduce the student to the history of the food &
beverage industries well as the classification of beverages.
Furthermore, a study of the various food service system, culinary
techniques, theories of nutrition and public health and their impact
on the hospitality industry.
BHTM252 Catering
Management + Lab (4 credits)
Emphasis on the techniques, logistics, market segments, services and
responsibilities involved. Further, Sales operations will be covered
in the course.
BHTM310 Hospitality
Accounting (3 credits)
Basic understanding of financial accounting and specifically
hospitality industry accounting concepts and procedures used in
hotels, restaurants and clubs.
BHTM352 Hospitality
Sales Management (3 credits)
The course is designed
to guide future sales managers in facing their most important
challenges, such as setting objectives, meeting sales targets,
organizing sales forces, building and training the sales team, and
running successful sales meetings.
BHTM460 Hospitality
Human Resources Management (3 credits)
Introduces students to the environment and various functions of
Human Resources Management. Topical coverage: planning, job
analysis, recruitment & selection, training & development,
performance appraisal, compensation systems, organizational
development, and labor management relations.

Events Management (3 credits)
Provides an introduction to the principles and practices associated
with planning, managing, and staging special events. It covers the
important components such as stage and logistic management,
marketing & promotion, event evaluation and reporting to offer a
systematic guide to organizing a successful event.
BHEM220 Festival &
Special Events Management (3 credits)
Introduces students to the principles associated with planning,
managing and staging festival and special events. It expands the
coverage and discussion of event management issues and strategies.
BHEM230 Events
Management in Leisure & Tourism (3 credits)
The leisure and tourism field is immense and diverse. This course
gives the advice, methodology, and the examples that should be of
use to students of events and their management. The field ranges
from arts to zoos, from antique shows to quizzes, from acrobatics to
sponsored walks, to setting up of exhibitions, seminars,
conferences, theatrical, sporting, artistic, and tourist occasions.
BHEM240 Health,
Safety, & welfare at Events (3 credits)
The course helps students to understand those who organize music
events so that the events run safely. It will discuss the prime
responsibility of the event organizer, local authorities, health &
safety enforcement officers, emergency services, contractors &
subcontractors for protecting the health, safety and welfare of
everyone working at, or attending, the event.
BHEM330 Event Risk
Management (3 credits)
Provides a comprehensive resource for managing event risks from
rowdy guests to life threatening riot, and limiting liability for
all kinds of events whether modest or grand. It discuses theory and
practical applications covering topics such as measuring risks,
alcoholism and drugs, crowd control, fire safety and emergency
medical services, food & water safety, outdoor event, and much more.
BHEM340 Corporate
Event Project Management (3 credits)
The course will give students the knowledge of how to create a new
system of tools and techniques that enables corporate event managers
to research, design, plan, coordinate and evaluate any corporate
event in order to produce higher rate of return. Topical coverage:
choosing a venue or site, costing & procurement practices,
evaluating risk management and reducing it with contract management,
and maximizing exposure through the World Wide Web.
BHEM350 Event
Marketing (3 credits)
It discusses the most effective tools for carrying out every phase
of a successful, integrated marketing campaign for any event, from
conferences and expositions to fairs and festivals. It will explain
the powerful forms of promotion, advertising, and public relations
that are needed to attract broad attention, motivate people to
attend, and achieve the desired goals of an event.
BHEM360 Special
Events (3 credits)
This course provides the logistical know-how and theoretical
understanding needed to take advantage of the countless
opportunities in this rapidly growing field. It covers topics from
developing the event vision to managing vendor contracts, from event
advertising to the latest in event management technology, and
guidance on every aspect of this complex and demanding profession.
BTTM357 Trade
Show/Exposition Management (3 credits)
The course provides students with the knowledge on trade shows and
exhibitions emphasizing on pre-planning, budget preparation,
advertising, public relations, & exhibit setup which includes booth
registration, booth accommodations & assignments, draping,
audiovisual, & programming.
BHTM380 Internship I –
on Campus (4 credits)
An extensive training lab course whereby students have a library
covering a wide selection of video training programs in all the
hospitality departments and covering specific proper procedures of
each job. In addition, professional speakers from the hospitality
industry of managerial levels will lay lectures and show actual
simulations on administrative skill procedures.
BHTM382 Internship II –
off Campus (4 credits)
Practical training and first hand experience in at least four (4)
areas in a reputable and prestigious hotel. A report is required to
be submitted by the student of the actual work experience gained and
an evaluation form is to be filled by the employer on the work
progress of the student.
BHTM400 Hospitality
Senior Project I (4 credits)
Independent study
project under the direction of a faculty advisor which will include
library, empirical research, or analysis and written on an
international hotel or restaurant chain.
BHTM420 Hospitality
Senior Project II (4 credits)
Advanced in depth study project under the supervision of a faculty
advisor to research the hospitality industry providing analytical
solutions to the problems being faced.
BTTM466 Research
Methods for Travel & Tourism (3 credits)
This advanced course is designed for
future managers in tourism that have a need to use research as means
of providing information for improving their managerial
effectiveness and their business as a whole. |
